Bourbon Cream Corn

Ingredients:

  • 2 cups smoked corn kernels
  • 1 oz. oil
  • 1 tbsp chopped garlic
  • ½  tbsp lemon pepper
  • 1 ½  oz. chicken stock
  • 1 oz. whiskey
  • ½  cup cream
  • 1 tbsp chopped cilantro
  • ½  cup Cotija or Parmesan cheese

Procedure:

  1. On a grill cook 5-6 ears of corn husk and all. (this can be done a day or two in advance)
  2. Cut the corn off the cob and with the back of the knife milk the cob by scraping it firmly
  3. Heat oil in a large sauté pan and add corn
  4. Add lemon pepper and garlic and sauté a 2-3 minutes
  5. Add chicken stock and cook down until the liquid has evaporated
  6. Flame with whiskey
  7. Add cream, cilantro, and reduce heat and simmer for 3-4 minutes
  8. Add cheese and stir for about a minute until it thickens
