Texas Hill Country Chili


Serves 10-12

1/8  cup olive oil

1 whole jalapeno

1 1/2 cup chopped onions

1/2 cup chopped celery

6 whole garlic cloves

1 red bell pepper

8 cups canned tomato pieces in their own juice

8 cups water

1.25 lbs of cooked ground beef

1.25 1bs of cooked ground venison

2 bay leaves

1/2  cup wet chicken base

1 cup chili powder

1/4 cup cumin

1/8 cup red pepper flakes

1/8 cup oregano

  • Sauté together the first 6 ingredients together until tender and then add the cans of tomato and water.
  • Blend the mixture completely until its like a soup
  • Add the ground beef and spices and chicken base
  • Let simmer stirring occasionally for about 30 minutes
  • Thicken with corn starch
